Description
Calcário do Principal Tinto has an exclusive gravity vinification, which reflects the nature of the limestone-rich soils: expressive fruit, vibrant acidity, rich texture and minerality until the finish.
The harvest is manual, the grapes being selected on a selection belt at the entrance to the winery. After destemming and crushing, the must is transferred to temperature-controlled stainless steel vats, where the alcoholic and malolactic fermentations take place. Maceration lasts about 20 days, using the délestage technique. The wine then ages for 24 to 30 months in used 225-litre French oak barrels, followed by an additional 6 years in bottle before being released to the market.
Tasting
Eye: Opaque ruby center.
Nose: Aroma of black fruits, cedar, leather, graphite.
Palate: Full-bodied, with firm tannins but polished edges. Vibrant acidity that remains throughout the tasting. Very long and mineral finish.
