Description
Cabochon is the most prestigious Franciacorta made by Monte Rossa. This wine is the result of careful research begun in 1985, aimed at an even more rigorous selection of vines from the Monte Rossa hillsides. A new winemaking system was also introduced, with the use of barrels for the first fermentation of the must. The Cabochon represents the pinnacle of the wines produced by Monte Rossa, marking a decisive turning point.
The results obtained were so exceptional that this wine has become an essential label of the company, a symbol of its excellence and know-how. Cabochon is the ultimate expression of the Franciacorta region, offering a truly unique taste experience.
Tasting
Appearance: a beautiful golden yellow colour, offering a nice brilliance. A fine and persistent perlage is observed, creating a pleasant effervescence in the glass.
Nose: notes of blond tobacco, bringing a subtle smoky touch. Mint and eucalyptus aromas mingle, bringing a fresh herbaceousness. Notes of almond and praline can also be perceived, adding a delicate aromatic complexity. Finally, a subtle scent of linden tea completes the olfactory bouquet.
Palate: Honey flavours dominate, providing a natural sweetness and a deliciously sweet mouthfeel. The balance between acidity and structure is excellent, creating a harmonious taste. Notes of citrus, especially grapefruit, can be perceived, adding a lively freshness and a pleasantly slight bitterness.
Food & Wine Pairing: Its structure and freshness make it an excellent companion for seafood dishes such as oysters, shrimp or scallops. The honey flavours are also a perfect match for poultry dishes, such as roast duck.
