Description
On a very draining soil, formed of stony screes of Argilo-limestone origin, resulting from the disaggregation of the rock, specific to this part of the Alpilles, the vines grow and mingle with the surrounding garrigue in a harmonious balance.
The "mistral" persisting in this region promotes a good health and the exchange of aromas.
Tasting
Appearance: Red, rich and intense. The dress is deep and dense garnet.
Aroma: Aromas of garrigue spices: thyme, rosemary, bay leaf and wild arugula.
Palate: The bouquet of black fruits are so dense that they are imagined confit, with blackberry, cherry and even griotte confit with brandy. The mouth leaves no doubt about the wonderful sunshine that the clusters have received. Density and balance are found in the mouth, as well as pronounced length.
Food pairing: Suitable with artichokes to barigoule, a leg of lamb, ratatouille, coq au vin, red and white meats.
Service: Serve at 14°C. Can be kept from 5 to 10 years.
