Description
Created in 1988 as a tribute to Elisabeth Salmon, co-founder of the House, this cuvée is distinguished by the brilliance and purity of its unique character. This rare and refined grand vin subtly offers the signature of their finest Pinot Noir and Chardonnay Grand Cru and Premier Cru terroirs. Elisabeth Salmon 2012 underlines the expression of the House's rosé blending expertise.
Tasting
Eye: A very luminous visual presence with soft, sustained, shimmering salmon hues. A highly seductive combination of sparkling brilliance and graceful effervescence symbolising the quest for complete maturity.
Nose: A refreshing, sensual expression of red and black berries. The exquisite sensation of a rich and complex aromatic amplitude (blueberry, gooseberry, peony). Lovely, refined and mature olfactory notes, respectfully declining the inimitable fragrances of fragrant roses and crystallised violets.
Palate: A tactile impact of measured power and bewitching finesse. A harmonious blossoming of gourmet and pastry flavours (panettone, cherry clafouti). A delicate structure on the palate, progressing to a chalky finish of cedar wood and blood orange jelly.
Wine and food pairing: An aromatic charm with a rare mineral dimension to accompany fine Bresse poultry with crayfish or some royal Breton langoustines.
