"Everything about this wine is special. It is a champagne that seduces. It is made from the three Champagne grape varieties in equal proportions and vinified in barrels, which gives it this beautiful balance, of great elegance, between the finesse of the bubbles and the strength of character. The Cuvée Brut Sous Bois can be served with a wide variety of dishes, including langoustines, white meats or a slow-cooked veal shank covered with thin slices of ceps. This champagne is the assurance of a formidable marriage in character and delicacy. Personally, I use the cuisine to serve the wine, to let it express itself. Raw or cooked shellfish, just-cooked cockles or a risotto with mussels, cuttlefish and saffron broth will reveal the full potential of this cuvée. For me, the Cuvée Brut Sous Bois is like an epicurean ode to be savoured at the end of the afternoon, on the terrace of the Apicius for example, or with a good cigar. I always associate this champagne with a pure moment of pleasure, a moment of happiness, precious and precise! "
Tasting
The Brut Sous Bois plays on a complex aromatic definition and a character linked to the vinification in oak barrels.
Eye: A crystalline, radiant golden yellow colour with brilliant reflections, enlivened by fine, sparkling, regular bubbles.
Nose: The olfactory impact of a wealth of harmonious expressions (dried fruit, fresh citrus and white fruit) combined with the seductive, finely buttery notes.
Mouth: A burst of flavours (toasted notes of milk rolls, toffee), conducive to the blossoming of great Champagne wines.
Food and wine pairing: Its strength of character and its straightforwardness will make it the ideal companion for white meats or pan-fried chanterelles.
