Description
Their Vintage cuvée, produced only in excellent years, matured on lees for 7 years, is the result of a selection of Chardonnay and Pinot Noir grapes in equal proportions (50% / 50%) in the greatest Crus of the Côte des Blancs and the Montagne de Reims.
The low dosage of the liqueur, expertly prepared by the cellar master, as well as its long aging after disgorging of at least 9 months, give it all its richness and allow the full expression of Chardonnay, a grape variety emblematic of the refined and daring style of the House. . A perfect balance which exudes notes of vine peach and apricot. The peppery and warm finish reinforces the fine balance of the vintage cuvée between generosity and elegance.
Tasting
Appearance: Generous ring of mousse, pale-gold reflections. Slow-moving, long-lasting effervescence.
Nose : Complex and spicy bouquet, the first nose immediately reveals a very expressive and somewhat Pinot Noir character. Aromas of pear, peach and fresh almond elegantly accompany the finesse of a chalky minerality, typical of the great Chardonnay terroirs. After the wine has opened, brioche-like and spicy overtones, evocative of white pepper and dried apricot, start to come through.
Palate : The wine is full-bodied, meaty and well-structured on entry with notes of nectarine and vineyard peach. This power gives way to a lovely taut, saline finish in which sweet spice aromas blend with notes of acacia and create great length on the palate, making this 2012 vintage a «well-rounded» wine.
Serving Advice : Ideal as an aperitif and throughout the meal, the freshness and character of this 2012 vintage will be a perfectly paired with langoustine tails braised with saffron butter or sweetbreads cooked with morels. Finally, it will accompany a farm-fresh Brie de Meaux.
