Tasting
Eyes: limpid and pure, a silky colour with pale gold highlights and a very fine effervescence.
effervescence.
Nose: a very pure, straightforward nose of minerality and salinity, accompanied by notes of white-fleshed fruit such as nectarine or peach.
notes of white-fleshed fruit such as nectarine and peach.
Palate: the attack is fresh and delicate, revealing an elegant salinity, full of tension. Richly aromatic, its natural sweetness reveals freshness and delicacy, without bitterness. The finish is very rich, precise and juicy.
Food pairing: This wine goes perfectly with a carpaccio of langoustines and scallops with yuzu lemon. It will also sublimate a veal medallion accompanied by fresh pasta with white truffles. For dessert, it is a perfect accompaniment to a few lemon mignardises.
