Description
Because of the purity of its air, Volnay was apparently the favourite residence of the ladies at the court of the Duke of Burgundy. The other attraction was of course the charm of its wines. "Santenots" is a specil "climat" in the Volnay appellation. Classified as a Premier cru, Volnay-Santenots is produced on the commune of Meursault. Eastern exposure, at mi-slope.
Tasting
Volnay-Santenots is always a moment of charm, seduction. Appreciated for its finesse, its sap and its bouquet, it is neither more nor less the most feminine wine of the Côte de Beaune.
Appearance : Bright ruby, garnet clair.
Aroma : Its aromas are delicate, complex and catchy: violet, currant, cherry and with age spices, game and cooked prune arise.
Palate : In the mouth, it's harmony. The three sensations, freshness, velvet and tannin are ideally complementary and give an impression at once delicate, fleshy and suave, without softness but with a controlled energy.
The wines offer a good scale supported by a fairly fresh acidity. The tannic structure is not too marked but the balance of the whole should confer a very good aging potential.
Food pairing : Suitable with beef, veal, game (venison, venison) and poultry.
Service : Must be served at a temperature of 16 ° C and can be kept between 8-20 years.
