Description

 

The cuvée takes its name from an ancient watchtower.

They reserve it for the best vintages.

It is made from a draconian selection of the best grapes from the great vineyards: Côte-Blonde, Côte-Brûne, les Moutonnes, and the oldest Serine vines on the estate (about 60 years old), giving very low yields. The wine is mainly aged in 228 litre barrels for 3 years.

Volume of 600 to 3,000 bottles per vintage.
 

 

Tasting

Eye: A deep colour with mahogany highlights.

Nose: The aromas reveal a touch of empyreumatic, kirsch fruit and spices: mocha, smoked bacon, cherries in alcohol and cumin.

Palate: Coated by the ageing process, it is balanced and shows accomplished aromas alongside an energetic power based on minerality and firmness of structure.

Goes wonderfully with small quails or stuffed pigeons.
